Buttermilk Pancake Shawns

4 Servings

1 1/2 Cup Flour
2 Tsp Baking powder
1/2 Tsp Baking soda
1 Tbl Sugar
1/4 Tsp Salt
1 1/2 Cup Buttermilk
1 Egg
2 Tbl Butter, Melted

In a large bowl whisk together the dry stuff

In a separate bowl whisk together buttermilk, egg, and butter. Stir
the wet into the dry just until combined. (There should be lumps in
the batter)

Place a nonstick pan over medium-low heat. Grease it with oil, drop
dollops of the batter onto the hot pan. Once bubbles form, flip the
pancakes once and continue cooking 1 to 2 more minutes until they are
cooked through. Server immediately.

NOTE: Do not over mix the batter or the pancakes will be dense and flat
rather than light and fluffy.
